Could I use coconut milk instead of regular milk for rice pudding?


I have some leftover rice I want to turn into coconut rice pudding, but all the recipes I can find say to cook the rice in the coconut milk (usually mixed with water). So can I use a recipe for leftover rice and just use coconut milk instead? Or will it cook differently? Or does anyone have an actual recipe?

      There are 2 ways I make Rice pudding…one is cooked with the milk and it is creamy…then I have one that I use eggs with.It is baked and it has a firm texture,,,I use my left over rice for the latter version .
      I use regular milk…but coconut milk can be substituted.

      2 cups milk
      2 eggs
      2 cups cooked rice
      1/2 cup sugar
      1./4 Cup raisins(optional )
      1/2 t cinn.
      combine and pour in buttered baking dish,bake for 30 mins at 350
