Herb Rubbed Tilapia with Roasted Radishes – P2 Recipe + Coconut Oil


DISCLAIMER: So I’m obviously eating this in P2. But my disclaimer is… coconut oil is not on the original protocol so proceed at your own risk. 🙂 ROASTED RADISHES RECIPE: serves 2 5 bunches red radishes (about 600-700grams) roots and leaves trimmed, halve or quarter so they’re all about the same size 1 tablespoon organic extra virgin coconut oil, melted 2 tablespoons chopped fresh flat leaf parsley (also called italian parsley) *reserve some parsley to sprinkle over radishes and fish when done 1/4 teaspoon each oregano, thyme, tarragon, and dill (or your own favorite herb combo) 1/4 teaspoon granulated garlic sea salt and pepper to taste Directions: Preheat oven to 425 degrees. You’ll need a cookie sheet. Add herbs and spices to radishes and stir to coat. Drizzle enough coconut oil over radish herb mixture to evenly coat radishes. Spread radishes onto cookie sheet and turn so they are cut side down. Bake for 20-25 minutes (may need longer if radishes are large) or until fork tender. Enjoy with fish, chicken, or steak!       Looks great, as usual…lol! I’ve tried radishes boiled and fried with coconut oil and love them both ways. Thanks for sharing yet another way to cook them. I’ve always hated radishes until I started HCG. I never knew what I was missing… ; p
