Interview with Dr. Bruce Fife Interviewed by Raena Morgan January 20, 2009 Raena Morgan: When it comes to coconut oil, Bruce, how much does a person need to take to get the health benefits? Dr. Bruce Fife: I generally would recommend between one and three tablespoons a day. But actually, any amount is better than none at all. And so, even if you take a teaspoon, that is good. But if you can take one to three tablespoons, you can enjoy a lot of the health benefits that come through eating the oil. There’s an interesting characteristic with coconut oil RAENA MORGAN: Okay. DR. BRUCE FIFE: It has a fairly low melting point. So, at 76 degrees— RAENA MORGAN: Oh, that’s right. DR. BRUCE FIFE: And below, it actually solidifies. And so above that temperature, it will be liquid like any other vegetable oil. But below that temperature, it will be hard. So, you might be able to go into your store and see a liquid coconut oil, you bring it home, if it’s colder in your home, then the next day, you open your cupboard and it will turn solid. And, you know, that surprises a lot of people. But it’s just the nature of the oil. All oils will solidify at some temperature, even olive oil. RAENA MORGAN: Okay. DR. BRUCE FIFE: If you but liquid olive oil in the store and bring it home and put it in the refrigerator, it will turn to a solid, as well. RAENA MORGAN: That’s right. DR. BRUCE FIFE: And, again
