Pinoy Recipe – Bicol Express (Pork Cooked in Coconut Milk)

Bicol express is basically some pork cooked in coconut milk with a lot of chili peppers. Visit for more mouthwatering Pinoy recipe. The chili pepper is what makes it “Bicol Express.” Without the chili peppers, the Bicolanos won’t consider it Bicol Express. Now, does this Pinoy recipe originates from Bicol region? I don’t really know the answer to that. Some people say that it’s really not from Bicol and some say it’s from Bicol. But who cares? I don’t. All I really care about is the very good taste of Bicol Express. The combination of coconut milk, bagoong, and chili peppers creates a very distinctive flavor. It is really good. My husband Nunnie does not like bagoong at all. He hates everything that has bagoong in it. But when he came home and saw this Bicol Express on the table, he tried it and he said it was good. It was almost gone by the time I came home from work. Then he asked me what food was that. I told him that we call it Bicol Express. And that it was just some pork cooked in coconut milk, chili peppers, and bagoong. When I mentioned bagoong, he was really surprised because he could not believe that it was that good despite the presence of bagoong.
